VistaJet: Michelin-star dining at 45,000 feet

VistaJet partners with one of the world's best restaurants for in-flight Michelin-star dining

VistaJet has announced a new partnership with acclaimed chef Mauro Colagreco, bringing Michelin-star dining to the skies. Voted the World’s Best Restaurant in 2019, Argentinian chef Colagreco's restaurant Mirazur on Cote D’Azur recently became the first three-Michelin-star restaurant to be awarded the sustainable B Corp status. 

Revealed at an exclusive press lunch, VistaJet announced that it is now offering a choice of three à la carte Mirazur menus, with Colagreco and his team basing their constantly-changing repertoire around the lunar calendar. The theory is that cosmic rays stimulate different plants at certain times of the year and by following the cycle, you will eat plants at their seasonal best. 

Diego Sabino, vice president of Private Dining said of the news: "We have been on a journey to transform your private dining experience in the air – to make it something to savour. We have explored the art and science of dining at high altitude, creating delectable flavours that our members can enjoy together on board, whatever the occasion."

Along with Mirazur, VistaJet works with over 7,000 top restaurants, suppliers and private chefs across more than 2,000 airports so that passengers are able to fully customise their meals in advance. From haute to healthy, it aims to ensure there is a menu option for everyone. 

Freshness is key, which is why, with Mirazur or any other menu they have on offer, VistaJet advises you to order 48 hours before takeoff. "If not, our private dining team will propose options based on your previous preferences, always ensuring multiple meal options on board in case you change your mind," said VistaJet's chief marketing officer Matteo Atti.

Creating haute cuisine at high altitude is no easy feat. The effects of elevation on taste buds and senses, let alone the limited space available for food preparation, means that huge care and attention is paid in curating the menu and and cabin hosts trained at top schools receive special training. Colagreco, for example, even goes as far as setting precise cooking instructions for each oven on each plane to take account of minute temperature variations.
